The roastery-attached café in Logan Square is where Intelligentsia staff actually drink. The room is bigger than it needs to be — concrete floor, blonde wood bar, the smell of roasting in the back. Slow bar pours come from a Modbar that runs cold-water-percolation; the result is a flavor profile that lands cleaner than most pour-overs. Worth the trip even if you've had Intelligentsia at every other location.
